All of my friends know this bark because when we do gift swaps around Christmas time, I always try to include a little goodie bag filled with my mom's peppermint barks because it truly is that good. This is perfect to add to a holiday present. I have never eaten something I don't like made by my mom, but this is definitely on the top of my list for favorites. As soon as Thanksgiving passes, my mom is making peppermint bark all the time because everyone loves it and it is a perfect treat to get into the holiday spirit. Have it with hot chocolate or coffee for an afternoon pick me up... you will thank me later.
Pure peppermint extract (we use Nielsen Massey brand)
3 bags of white chocolate chips (we use Ghirardelli brand)
2 cups of crushed up candy canes (you can do this yourself or buy pre-crushed peppermint) and THAT'S IT!!
Step by Step Instructions
On stovetop, use a double boiler to melt the chocolate. *how to double boil: Fill smaller pan/bowl with white chocolate chips, add bigger pan to bottom of smaller pan with just enough water so it simmers (enough to melt the chocolate)*
Once chocolate is melted, add half the amount crushed candy and 2 cover fulls of peppermint extract to the melted chocolate and mix it in
Put down parchment paper onto table, turn stove off, and pour the mixture of the chocolate and peppermint onto the parchment paper
Smooth out chocolate until it is even, then add rest of crushed candy cane on top
Let cool until hard (you can put in refrigerator if you need it to cool faster)
After cool, break into pieces with knife or hands
