The 411 on Carol's Blueberry Cake
Updated: Dec 17, 2019
Blueberry Cake
For years, my mom (Carol) has made her famous blueberry cake for my birthday which is celebrated on Thanksgiving because it's the week after. She does not make it often so all my relatives and I look forward to it on that day every year. I have never been a ”sweets” girl. I never liked frosting or cake so this was my mom’s way of making a desert that I could enjoy after singing happy birthday. This cake is perfect for the holidays. It is a different option when you know there will be many pecan pies and cookies. It pairs perfectly with vanilla ice cream when your sweet tooth comes in after a big holiday meal. It is also a perfect quick breakfast on christmas morning when your in a hurry to get out the door. If you are interested in being everyone’s favorite this holiday season, follow the recipe below!
