The Not-So-Guilty Pasta Salad

Anything involving pasta is a yes please for me. This meal is quick to make, tastes delicious, and is perfect for the person on the go. It's also filling and is relatively healthy. People will definitely be impressed with the flavors; my roommate said it tastes just like a deli made it (hi ken :) ). We showed it on our IG stories and lots of you asked for the recipe. With that said, below is a quick and easy recipe to make, enjoy. 


DINNER INGREDIENTS / HOW-TO:


+ Gluten Free Pasta 

+ Red Peppers 

+ Baby Cucumbers

+ Baby Tomatoes 

+ Marinated Fresh Mozzarella Balls 

+ Salt & Pepper 


Start by cooking pasta. Once cooked to your liking, strain and put it in the fridge to cool. Cut up red peppers, baby cucumbers, and baby tomatoes. Place all vegetables into a bowl and season with salt and pepper. NEXT, THE KEY INGREDIENT... On top of the vegetables, dump the entire container of fresh mozzarella balls including all of the oils and spices that come in the container that the mozzarella balls are marinated in. Mix the cheese and vegetables together until everything is coated in the oil. Once the pasta has cooled down, add pasta to the bowl with vegetables and cheese and stir it up. Top with salt and pepper and enjoy cold.
