The 411's Turkey Chili

During this quarantine, I have been living off of turkey chili. It is quick and easy to make and provides endless left overs. It is perfect for a quick lunch, snack, or dinner and takes 2 minutes to heat up. I top mine with a little plain greek yogurt, and Violife shredded vegan cheese and ta dah, a guilt free meal that tastes delicious. Give it a try with the recipe down below!

Ingredients:

  • 2 onions

  • 1 can of black beans

  • 1 can of red kidney beans

  • 1 large can of corn

  • 2 cans of diced tomatoes

  • 1 can of green chilies

  • 3 tbsp of tomato paste

  • 16 oz of chicken broth

  • 1 package of ground turkey

  • 2 tbsp olive oil

Spice To Taste:

  • garlic

  • sea salt

  • black pepper

  • crushed pepper

  • cumin

  • chili powder

Directions:

  1. Dice two onions and sauté them in a big pot with olive oil (4-5 minutes)

  2. Chop and add 2 cloves of garlic and sauté for 1 minute

  3. Add the rest of the spices and let it cook for 1 minute

  4. Add the ground turkey and sauté it till it’s brown and cooked through

  5. Add 3 tbsp of tomato paste and sauté for 1 minute

  6. Add 2 cans of crushed tomatoes

  7. Add 1 can of green chilies

  8. Add 16oz of chicken broth

  9. Drain and rinse beans and corn in a colander and add to the pot

  10. Let simmer for 30 minutes and re-season to taste

Best served with:

Shredded cheese (vegan violife or regular)

Avocado

Sour cream/Greek yogurt
